Sunday: Asparagus and lemon risotto. Really good, a little too time consuming though.
Monday: California Veggie Sandwich
Tuesday: Heirloom Tart. I made this yesterday for dinner and then ate it in the morning for breakfast because it is THAT good. (My ricotta was moldy so I left that out and it still turned out amazing)
Wednesday: Sweet potato burritos.
Thursday: Falafel. This is my favorite because I usually have everything in the pantry to make this. So if I don't want to go grocery shopping for awhile, this is my go-to recipe.
Friday: Black bean and salsa soup
Saturday: Lentil tacos
Sunday: Spinach and ricotta gnocchi
I feel so much better when I eat lots of vegetables. And our grocery bill is lots cheaper when we eat vegetarian. My kids even are starting to love vegetables! Kenzie loves string beans and broccoli and Benson likes peas, tomotoes, and avocados.
